Avoid the Gall
The "gall" is the middle of the leaf pile. Avoid pouring into the middle when brewing in Chaouzhou style with a blend of whole and broken leaf.
The phrase is from hunting, where you don’t want to puncture the gallbladder because it makes the meat sour.
